Dietitian, gym junkie and food lover are three words you might use to describe Teri L. Collins, RD, LD from Managed Macros. Teri not only has a passion for living a healthy lifestyle, but she practices what she preaches; she is an avid runner, passionate about all aspects of exercising and has a love for nutrition and healthy foods.

Teri is currently Vice-President of the Central Iowa District Dietetic Association, Co-chair in The Kids Take Flight when Kids Eat Right 5k/1k, an independent nutrition consultant and business owner of Managed Macros and more! On her blog you can find delicious recipes, health tips and plenty of inspiration to maintain a healthy lifestyle.

I am pleased to introduce one of Around the Plate’s Nutrition Experts and hope you enjoy getting to know her a bit better.



AtP: What inspired you to start blogging?

Teri:  I was introduced to the world of blogging in 2007. My friend, Mary, started her blog, ‘Starting from Scratch’ (or something like that!) and I was opened to a whole new world after that! I didn’t start my own blog until 2010 (about the time she quit hers!) and I have been trying to grow and keep it updated ever since…it could be a full time job!

AtP: Who or what inspired you to become an RD?

Teri: I am one of the few that did not have that ‘light bulb moment.’ I started my education in commercial horticulture with an interest in landscape design. I started to lose that interest although still had a spark for fruit and vegetable science…I guess dietetics was just the next step!

AtP: What is your favorite post up and running on your blog and why?

Teri:I do like the ‘Manage My Macro Challenge.’ It has downsized from 12 people over 12 weeks to 10 people participating in a 10 week challenge. We correspond through a private FB page and the experience has been positive for both the participants and me! It sure has kept me in on my motivation and educational game!

AtP: Do you have a personal nutrition mantra that you live by?

Teri:Yes, by George Eliot. ‘It’s never too late to be who you might have been.’  I am 43. In 2005 I uprooted my life and son to go back to school. I also put a full set of braces on a year later. I started upping my running and now run about 35 miles/week competing in all kinds of races. Once I stepped out of being grounded by my ‘age,’ I realized there really is not anything I can’t do! Don’t tell me you’re too old!

AtP: If you could meet any chef in the world, who would it be and why?

Teri:If I had to pick a chef it would have to be one of the world’s best pastry chefs. If you read my blog, I think you would find one recipe that is baked with only one ‘sweet’ dessert. I love sweet desserts…that is why I don’t make them!  I would gladly indulge in these creations that I admire so much…what talent!

AtP: What is your favorite dish to cook for your family and why?

Teri: Red Curry Chicken with Coconut rice or Chicken Salsa Verde with Chickpeas.  These are two dishes my teenage son like, so that means a meal we can all enjoy together!

AtP: If you could give one piece of nutritional advice what would you say?

Teri:Focus on fresh first and there is no need to count calories!
