Baking season is upon us and that means it's time for all things holiday! If you're like me, peppermint doesn't even register in my brain until holidays begin. So with Thanksgiving a few short weeks away and then of course Christmas, I am perfecting my holiday baking and whipping up a batch of Peppermint Mocha Brownies. There is a secret ingredient you'd never even think was in there - International Delight® Peppermint Mocha Coffee! Yes, you heard me right. I always find during the busy season we're bound to be invited to a late minute party, and these will be on my list for this year.
Ingredients:
1 Box of favorite Brownie Mix (+ Egg and Oil from directions)
2 TSP Instant Espresso Powder
International Delight® Peppermint Mocha Coffee Creamer
10-15 Peppermint Candies Crushed
Directions:
1) Combine brownie mix + egg and oil as called for on package. In lieu of water, replace with International Delight Peppermint Mocha creamer as directed on package.
2) Add 2 TSP Instant Espresso Powder and approx. 1/2 of crushed peppermint to batter.
3) Bake 350 in nonstick sprayed pan according to the directions on the package.
4) When done, remove from oven and sprinkle rest of peppermint candies on top.
5) Cool and Serve
These brownies were gone so quickly. Even Miss H enjoyed a couple. I love how the peppermint just melted into the batter, but still left a rich and moist brownie. Definitely a crowd pleaser and perfect for entertaining, a pot luck or just a nice holiday treat for a friend or neighbor.
When I'm not baking with International Delight, you'll find it in my coffee on a regular basis. I especially love the International Delight® Salted Caramel Mocha. It's perfect for these chilly days and even yummier in an iced coffee!
I find my International Delight Coffee Creamer in the cold section of Walmart. My Walmart has it located in the bin in the middle of the cold area, but also in near the milk and cream. Check for them in both locations! Keep an eye out at your local Walmart as there will in-store demonstrations in select stores Thanksgiving weekend. You won't want to miss that!
