This is the first episode in a new video series, Curate The Plate. Hosted by Rachel Cossar, Boston City food writer and former Boston Ballet dancer, this series focuses on the inner workings of the restaurant industry in Boston and beyond.
In this inaugural episode of Curate The Plate, a new series focusing on the inner workings of the restaurant industry, I chatted with key players at the Forbes Under 30 Summit. Forbes magazine, one of the world's leading voices in innovation and business, held its Under 30 Summit in Boston for the first time ever last week. A mainstay of the four-day conference featuring talks by Richard Armstrong, Ashton Kutcher, and Maria Sharapova, among others, was the Under 30 Food festival. With the top 30 most innovative culinary professionals all under one roof, the evening showcased their personalities and their dishes in a competitive spirit to win the popular vote for 2016.

From Forbes editor Randall Lane to founder of the Food Network Lee Schrager, celebrated Boston chef Chris Coombs and some of the notable, attending young talents themselves, the conversations highlight perspectives on innovation in food. What does innovation in food look like ? What is driving the restaurant industry today and just as importantly... what did these chefs prepare for this high rolling moment of their careers?
As the series progresses, Curate The Plate presents an opportunity to dig into some of the details that go into presenting diners with the beautiful and delicious dishes and ultimately, experiences, they so crave. Guests on the show will include leading culinary personalities from around the Greater Boston area. From the art of "plating," choreography in the kitchen, local sustainability and the issue of hospitality and staffing in the kitchens, I'll go in depth on it all.
