Ingredients

1/4 cup vegetable oil

12 corn tortillas

1 (16-ounce) can refried black beans

6 tablespoons butter, divided

12 large eggs, divided

Ranchero Sauce (recipe follows)

3 avocados, peeled, pitted, and sliced

1 cup crumbled Cotija cheese

Garnish: fresh cilantro

Instructions

In a large skillet, heat oil over medium-high heat. Add tortillas, in batches, and cook for 1 to 2 minutes per side or until golden brown and crisp. Drain on paper towels.

Heat beans according to package directions, and spread evenly over tortillas.

In a large skillet, melt 1 tablespoon butter over medium heat. Add 2 eggs, and fry, covered, for 3 to 4 minutes or just until yolks are set. Place eggs over beans on tortillas. Repeat with remaining butter and eggs. Top each with desired amount of Ranchero Sauce, avocado slices, and Cotija cheese. Garnish with cilantro, if desired.

Ingredients

2 tablespoons butter

1 cup chopped onion

1/3 (16-ounce) package chorizo, casings removed

6 tomatillos, husked and chopped

2 vine-ripe tomatoes, chopped

2 jalapeños, seeded and diced

6 cloves garlic, minced

1 cup chicken stock

1 teaspoon ground cumin

1 teaspoon ground chipotle pepper

1/2 teaspoon chili powder

1/2 teaspoon salt

Instructions

In a medium skillet, melt butter over medium-high heat. Add onion and chorizo, and cook for 4 to 5 minutes, stirring occasionally. Add tomatillos, tomatoes, jalapeños, and garlic; cook, stirring frequently, for 8 to 10 minutes or until tomatillos are tender. Stir in chicken stock and remaining 4 ingredients; bring to a boil. Reduce heat, and simmer for 20 minutes, stirring occasionally, until mixture thickens. Serve immediately, or cover and refrigerate for up to 3 days.
