Ingredients
1 cup milk
1/2 cup butter
1/2 cup warm water (105° to 110°)
2 (1/4-ounce) packages active dry yeast
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
2 large eggs
1 teaspoon salt
7 cups bread flour, divided
1/4 cup butter, melted
Cinnamon Roll Filling (recipe follows)
Salted Caramel (recipe follows)
1 cup chopped pecans
Instructions
In a medium saucepan, scald milk over medium heat; remove from heat, and add butter. Set aside until butter is melted.
In a small bowl, stir together 1/2 cup warm water and yeast; let stand for 5 minutes or until foamy.
In a large bowl, beat granulated sugar and next 3 ingredients with a mixer at medium speed until smooth. Stir in cooled milk mixture and yeast mixture. Gradually add 5 cups flour, beating until smooth after each addition. Beat in enough remaining flour to make a soft dough.
On a lightly floured surface, turn out dough, and knead for 6 to 8 minutes or until dough is smooth and elastic. Place dough in a lightly greased bowl, turning to grease top. Cover, and let rise in a warm draft-free place (85°) for 1 hour or until doubled in size.
Spray a 12- to 15-cup Bundt pan with cooking spray.
Roll dough into 1-inch balls, dip in melted butter, and roll in Cinnamon Roll Filling. Place in prepared pan, cover, and let rise in a warm draft-free place (85°) for 1 hour or until doubled in size.
Preheat oven to 350°.
Pour 1/2 cup Salted Caramel over dough. Bake for 35 to 45 minutes or until golden brown. Let cool in pan for 10 minutes. Invert monkey bread onto a serving platter. Stir chopped pecans into remaining Salted Caramel. Pour over bread.

6 tablespoons butter
1 cup firmly packed brown sugar
1 cup heavy whipping cream, warmed
2 teaspoons sea salt
Instructions
In a large skillet, melt butter over medium heat. Add brown sugar, and cook, whisking constantly, until bubbly. Slowly whisk in cream, and cook, whisking frequently, for 10 minutes. Whisk in sea salt. Let cool for 15 minutes before using.
