Well, we survived the pantry challenge week and our freezer and fridge are mostly bare, and the pantry has a nice empty space carved into it. I’m looking forward to restocking and starting new and fresh on ingredients!

Hawaiian Meatloaf

Hawaiian Meatloaf
2 lbs ground beef
2 eggs
1 – 20 oz can crushed pineapple
1 cup bread crumbs
Sauce: 1/2 cup pineapple juice, 2/3 cup ketchup, 2/3 cup brown sugar
Side dishes suggestions: green beans or corn, or fries or mashed potatoes, or baked beans
Grilled Pork Chops with Peaches & Red Onions
4 small pork chops
Garlic powder, sprinkles
Onion powder, sprinkles
3 large peaches
1 medium to large red onion
Side of homemade rolls or store bought rolls/bread loaf
Black Beans with Mango & Cilantro
1 lb. dried black beans
2 mangoes
About 10 cilantro stems with leaves
1 tsp ground cumin
(Optional: 2 cups of chicken or vegetable broth)
Sausage Pizza Kebabs
3 Sweet Italian sausage links
1 red onion
1 each – red bell pepper, green bell pepper, yellow bell pepper
Shredded mozzarella or cheddar cheese
1 cup pizza sauce, for dipping
Grilled garlic bread
Crunchy Parmesan Spaghetti
1/2 to 3/4 lb spaghetti noodles
2 Tbsp olive oil
1/2 cup bread crumbs
1/4 cup grated Parmesan cheese
(1 tsp Italian seasoning if using plain bread crumbs)
Salsa Verde Breakfast Tacos
8 eggs
1/2 tsp ground cumin
1 1/2 tsp garlic powder
8 tortillas
1 avocado
1 green pepper
1 tsp ground cumin
Pinchful Goat cheese crumbles or queso cojito (or dollop of sour cream!)
1/2 cup salsa verde
Serve with a side of fresh fruit
Skillet Chocolate Chip Cookies
1 stick (8 tablespoons) unsalted butter
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 egg
3 Tablespoons milk
1 1/2 cups white flour
1/2 teaspoon baking soda
4 semi-sweet chocolate baking squares (or 1 cup chocolate chips)
