Arborio & Mushroom Fall Side Dish
1 Tbsp butter
1 Tbsp olive oil
2 Tbsp. minced onion, or 1 small onion
1 tsp. dried basil
1 cup Arborio rice
2 cups chicken broth (plus 1 cup water)
1 tsp. olive oil
8 oz. baby bella mushrooms
10 oz. fresh spinach leaves
1 sweet apple, such as honeycrisp
Roasted Garlic Green Beans
2 Tbsp olive oil
1 lb green beans
2 Tbsp minced garlic
1-2 Tbsp grated or shredded parmesan
Succotash with Butter and Dill
12 ounce bag frozen baby lima beans
1 cup frozen corn
1-2 Tbsp butter or margarine
1/2 tsp dill
Maple Roasted Butternut Squash
1 large butternut squash (about 2-3 pounds)
1 Tbsp extra virgin olive oil
1/4 cup maple syrup
Few dashes each of ground cinnamon, nutmeg and allspice
Slow Cooker Stuffed Sweet Potatoes
4 medium sweet potatoes
2 tablespoons butter
1 tablespoon honey
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
Caramelized Onion Mashed Potatoes
2 Tbsp olive oil
2 Tbsp white sugar
2 Tbsp balsamic vinegar
2 large white onions
6 large potatoes
About 1/3 cup butter
About 1/2 cup milk
Optional: sour cream, cream cheese – whatever you like in your mashed potatoes
Golden Apple Raisin Stuffing Muffins
2 Tbsp olive oil
1 small red onion
3 celery stalks
6 granny smith apples
2 cups vegetable or chicken broth (turkey broth if you have it)
About 1 1/2 cups golden raisins (1 box)
6 cups homemade or store bought cube stuffing
1 tsp poultry seasoning
2 9″ pie crusts – homemade or store-bought
Cranberry Apple Cider
1 64 oz. bottle 100% apple juice
12 oz. bag fresh cranberries
Handful whole cloves
Couple cinnamon sticks
Maple Cranberry Syrup
1 14 oz. can whole cranberry sauce
1/4 cup maple syrup
1/4 cup milk
