When I was in high school my friends and I used to go to Hogi Yogi and buy their Chicken Teriyaki Bowl. There really wasn't anything like it! I was craving it the other day so I decided to make my own. It turned out delicious and it isn't too bad for you!
Slow Cooker Chicken Teriyaki Bowl
servings: 4
Ingredients:
2 lbs boneless skinless chicken
1 cup chicken broth
1/2 cup teriyaki sauce
1/3 cup brown sugar
3 minced garlic cloves
2 cups of cooked rice
1 cup carrots, steamed
1 cup broccoli, steamed
Directions:
Place chicken in the slow cooker. In a bowl, mix together the chicken broth, teriyaki sauce, brown sugar, and garlic cloves. Pour sauce over the chicken and cook on low for 6 to 8 hours or on high 4 to 5 hours.
Steam your carrots and broccoli so they are tender. I like to buy the steamer bags (found here) and cook my veggies in the microwave.
In 4 bowls add your rice, then carrots and broccoli, then add your chicken. With the leftover sauce you can drizzle it on top. If you like more sauce, add more teriyaki sauce. Serve Hot.
To make it a little healthier, use fat free chicken broth, low sodium teriyaki sauce, and brown rice.
